Housed within a distinctive former 19th-century church, the redesigned bar features marble, timber and atmospheric lighting in the redesigned bar area. The cocktail menu features a mix of classic serves and contemporary creations, according to coverage by Restaurant Online.

Who said what about the Gaucho Manchester relaunch?

Baton Berisha, CEO of Gaucho, said: “I am incredibly excited to unveil the new look of our Manchester restaurant and to reintroduce Gaucho in one of the UK’s most dynamic and exciting cities,” as reported by Manchester’s Finest.

“Manchester is a true hub of creativity, culture and history, and over the past 25 years we’ve had the privilege of welcoming the incredible people of Manchester through our doors,”

Berisha added.

“Their support has made this restaurant what it is today.”

“That’s why we’ve chosen Manchester as the first city to introduce the new Gaucho,”

Berisha stated.

“This refurbishment marks an exciting new chapter for the brand, reflecting our continued commitment to the city and our ambition to deliver exceptional hospitality in a setting that celebrates both our heritage and this great city’s vibrant spirit.”

What else is new at the refurbished Gaucho Manchester?

The redesign covers the 205-cover dining room, open kitchen and bar, while the menu has been updated with new dishes inspired by classic Latin American cooking, according to Manchester’s Finest. Gaucho has operated in Manchester for more than 25 years, occupying a former 19th-century church on St Mary’s Street, just off Deansgate.

Original features of the building have been retained, including its church organ, while the mezzanine continues to overlook the main dining room below. The new interiors combine natural timber, marble, earthy tones and atmospheric lighting, with forest green and brushed gold details used throughout.

An updated open kitchen will place the restaurant’s statement grill in full view of the dining room, allowing guests to watch the expert chefs at work. The menu, overseen by culinary director Anthony Ekizian, will continue to centre on Gaucho’s steaks and signature Churrasco cuts.

New additions include king prawn sugo, scallops with lemongrass, chilli and mango, sea bream with corn humita, and flat iron chicken with macha and lime. A redesigned 47-seat bar will offer a bespoke selection of Latin American wines alongside cocktails including a Margarita Picante with a chimichurri salt rim, a Garrapiñada Rum Old Fashioned inspired by Argentine caramelised peanuts, and a Tiramisu Espresso Martini finished with tiramisu foam and cocoa.

Two private dining rooms are also being introduced, as reported by Manchester’s Finest. The Mendoza will seat up to 11 guests, while The Hive will accommodate groups of up to 20 guests.

Background of the development

Gaucho Manchester has operated in the city for more than 25 years, occupying a former 19th-century church on St Mary’s Street, just off Deansgate. The venue closed its doors from Monday 13 July 2026 to undergo a major refurbishment, reopening on Friday 14 August 2026.

Moët Hennessy’s Belvedere Organic Vodka has partnered with Gaucho Manchester restaurant to open a Martini Bar on 14 August 2026. Belvedere Vodka is produced in one of the world’s longest operating Polish distilleries and is part of the LVMH luxury-goods group.

The brand released its Belvedere Organic Vodka, a super-premium vodka made from 100% organic-certified rye, as part of its commitment to craft and excellence. The house is proud to have launched its Belvedere Organic Vodka, which is emblematic of a modern spirit where heritage and innovation go hand in hand.

Prediction: How this development can affect Manchester’s hospitality sector

The opening of the Belvedere Martini Bar at Gaucho Manchester is likely to affect Manchester’s hospitality sector by reinforcing the city’s position as a destination for premium dining and cocktail experiences. The partnership between a major spirits brand and an established restaurant group demonstrates confidence in Manchester’s market for luxury hospitality offerings.

For local consumers, the development provides access to exclusive cocktail experiences and may raise expectations for bar quality and innovation across the city’s restaurant scene. For competing venues, the introduction of a dedicated martini bar with a high-profile brand partnership may encourage similar investments in bar concepts and premium spirits collaborations.

The refurbishment also signals a broader trend towards experiential dining, where venues combine food, drink, and entertainment to create destination experiences. This could influence how other Manchester restaurants approach their bar offerings and cocktail menus in the coming years.
